Brewing:
Bring water to a boil (212ºF/100ºC), allow to cool for about 2 minutes to 195-205ºF, then steep for 2-4 minutes.

The members of the Mineral Springs Co-op in Darjeeling, India grow tea as one part of a diversified production system which also includes spices, citrus, and dairy sold locally. The farmers from this beautiful hill country community are deeply committed to organic and sustainable agriculture. Their diversified crops have created more sustainable conditions for the community’s economics and local ecology. Most teas–even those that are certified as fair trade–come from large plantations where workers have little say and are trapped in a system of dependency. The small farmers who grow our teas control their land and their livelihoods. Together, we’re building an alternative tea model and a farmer-led future for the tea industry.
